EGG FRIED BROWN RICE

Ingredients

6 eggs
2/3 cup spring onions, finely sliced
3 tbsp light soy
1 tbsp ginger, finely chopped
2 tbsp vegetable oil
1 small red onion, finely chopped
4 cups steamed brown rice, cooled
½ cup corn kernel
1 1/3 cup Chinese or Savoy cabbage, finely shredded
Ketjap Manis to serve

Method

  1. Combine eggs, spring onions soy and ginger in a bowl and whisk to combine.
  2. Heat oil in wok or large pan until hot.
  3. Add onion and stir fry for a minute.
  4. Add egg mixture and leave for 10 seconds to cook before lightly scrambling for another minute.
  5. Add rice, extra soy and stir-fry until rice is warm.
  6. Toss in cabbage and stir-fry for 30 seconds or until well combined.
  7. Serve with Ketjap Manis (and chilli sauce for big kids).
